Honey production begins with nectar, the sweet liquid flowers produce to attract pollinators. On each collection trip, worker bees visit up to 1,500 flowers, gathering nectar and storing it in a special "honey stomach." This organ is distinct from their digestive stomach and is used solely for transporting nectar.
As bees collect nectar, they mix it with enzymes in their honey stomach, breaking down complex sugars into simpler sugars. When their honey stomach is full—often weighing nearly as much as the bee itself—they return to the hive, flying low due to the added weight.
Back at the hive, bees regurgitate the nectar into the hexagonal honeycomb cells. While this natural process may sound a bit unusual, it is key to creating honey. Through a communal action called trophallaxis, worker bees pass nectar from one to another, further transforming it.
Initially, the nectar is around 80% water. Bees fan their wings vigorously to create airflow and aid evaporation. Combined with the hive's natural warmth (around 95°F), this evaporates excess water, thickening the nectar into the rich, golden honey we know and love.
