Overnight Pumpkin Oats

December 19, 2019 1 min read

This sweet, easy recipe has been borrowed from Amy’s Healthy Baking Blog. Thank you Amy!

According to the author of this overnight pumpkin oats recipe, the mixture of simple ingredients blends the taste of fall with the smooth, creamy and sweet flavors associated with warmer months.

“A thick, creamy bowl of pure comfort food flavors that’s still perfectly acceptable for warmer summer mornings… And basically tastes like dessert for breakfast,” she says.

This recipe also contains an ample amount of Greek Yogurt, which carries a potent punch of protein ( It is about twice the amount of protein that most regular yogurts do).

You Will Need:

1/4 Cup Old-Fashioned Oats

1/2 Cup Plain Greek Yogurt

1/2 Cup Pumpkin Puree

1/4 Teaspoon Cinnamon

1 Tablespoon Honey or Sweetener of Your Choice (Agave, Splenda)

 Directions:

According to Amy, making oats overnight requires very little effort. Simply add your oatmeal, and the required ingredients for cooking the oatmeal, to a glass jar and close the lid. The water is said to soak into the oats overnight. This gives you delicious mushy oats without any cooking! Besides, this sweet treat is best served cold. When your oats are ready the next morning, simply add the remaining ingredients and enjoy!
