Ingredients:

  • 1/3 cup Plain Greek Yogurt
  • 4 eggs, beaten
  • 1 sleeve of regular Ritz crackers (crushed)
  • 1 1/4 cup shredded cheddar cheese
  • 1/3 cup Parmesan cheese
  • 1/2 tomato, diced
  • 1/2 pepper, diced
  • 1/2 red onion, diced
  • 10 slices bacon, diced
  • 2 tablespoons extra virgin olive oil

You Will Need:

1/3 Cup Plain Greek Yogurt

4 Eggs Beaten

1 Sleeve of Regular Ritz Crackers (Crushed)

1 1/4 Cup Shredded Cheddar Cheese

1/3 Cup Parmesan Cheese

1/2 Tomato Diced

1/2 Pepper Diced

1/2 Red Onion Diced

10 Slices Bacon Diced

2 Tablespoons Extra Virgin Olive Oil

4 Tablespoons Melted Butter

 

In a pan with 2 tablespoons extra virgin olive oil, cook diced peppers, red onion and bacon. When these are almost finished, approximately after 10 minutes, add the tomato. Cook this for an additional 10 minutes and set aside.

Preheat your oven to 350 degrees and grease a medium-sized baking pan, smaller than a cake pan, with vegetable oil or shortening and set aside.

In a medium-sized bowl, beat your eggs, adding your softened Plain Greek Yogurt, melted butter and sautéed vegetables after all these are blended nicely. In a separate small bowl, add your crushed Ritz crackers and cheese. Mix 3/4 of your cracker mixture with all of the egg mixture. Save the rest for sprinkling on top, then place in the oven. Feel free to put on more cheese right before the bacon casserole is done. Cook for about 20 minutes, and then let cool before serving. Serve for breakfast with crispy hashbrowns, or all by itself!
