Yum! What tastes like summertime more than coconut lime pie? This simple recipe will have your mouth watering for more. It also features one of our favorite ingredients. Yep, you guessed it! It’s honey!

Ingredients

1 Tablespoon Coconut Oil

1/2 Cup Lime Juice

3 1/2 Tablespoons Honey

2 Tablespoons Coconut Flour

4 Teaspoons Lime Zest

1 Cup Coconut Milk

3 Egg Yolks

 

How to Prepare Honey Coconut Lime Pie

Preheat your oven to about 325 degrees. In a large bowl, carefully whisk together your coconut milk and oil, lime juice, egg yolks, honey and lime zest. Whisk or beat these ingredients together for about 4 or 5 minutes, until forming a nice fluffy consistency. Pour this mixture into a pre-made graham cracker pie crust. Bake for about 8 to 10 minutes, or until the filling becomes more firm. Set aside to cool on a rack, before refrigerating your pie for at least 30 minute. Serve with some cool whip, honey or a dollop of ice cream!
